Bondowoso, a regency in East Java, is known for its fertile soil, mountain landscapes, and an active volcano that emits electric blue flames at night. Java’s coffee legacy dates back to the 1700s when Yemeni coffee seedlings were introduced through Indian trade. It is a key part of the historic “Mocha Java” blend.
The wet-hulled process, or Giling Basah, is a signature method in Indonesia, adapted to the country’s humid climate. This technique gives Indonesian coffees their distinct flavor profile. Coffee cherries are depulped, fermented overnight, briefly dried, hulled, and sorted before resting until export.
